Beef Pricing

We sell our beef by the quarter, half, or whole.
 
Pricing is based on the hanging weight of the beef.  Hanging weight is the weight of the beef after butchering but before trimming of the fat and bone.  This weight will vary from animal to animal, but our estimate is usually quite close.  (See below for estimated weights.)
 
For our beef, we charge $2 per pound.  There is then a processing fee, which you will pay directly to the butcher when you pick up your meat.
 
The butcher's processing fees (also based on hanging weight) are as follows:
 
Quarter beef:  .40 cents per pound
Half beef:         .46 cents per pound
Whole beef:    .34 cents per pound
 
The butcher also charges two small fees for waste and slaughter.  (Total of $12.50 for quarter, $22.50 for a half, $45 for a whole.)
 
We require payment for the estimated weight of your portion (see below) upon placing your order.  After we receive actual hanging weight from the butcher, we will either owe you the difference or you will owe us.  (Again, you will only be paying us the $2 per pound; you pay the processing fees directly to the butcher.)
 
Estimated weights:
 
Quarter beef:  180 lbs
Half beef:         360 lbs
Whole beef:     720 lbs
 
(Note that you will lose some of this weight when fat and bone are trimmed.)
 
Summing it all up
 
The total cost to you - including our charge and the butcher's charges - is estimated to be:
 
Quarter beef:  180 lbs x $2/lb ($360) + .46/lb proc ($82.80) + $12.50 fees = $455.30
Half beef:         360 lbs x $2/lb ($720) + .40/lb proc ($144) + $22.50 fees = $886.50
Whole beef:    720 lbs x $2/lb ($1,440) + .34/lb proc ($244.80) + $45.00 fees = $1729.80
